Frozen product. Defrost in fridge overnight. Preheat oven to 180 degrees. Remove turkey from fridge 30 minutes prior to cooking. Remove from plastic cover and place on a large baking dish seam-side down.Place in preheated oven and cook from 1 hour and 20 minutes (check if the juices run clear by inserting a skewer or knife into the thickest part of the turkey. If the juices are not clear, return to oven and cook until they do)Turn oven up to 200 degrees. Baste the turkey (with a spoon or pastry brush) with the juices at the bottom of the pan. Cook for approximately another 10 minutes or until the skin is golden. Take care not to burnRemove from oven. Allow to rest for 10 minutes before slicing
I brine the turkey breast overnight before filling it with an amazing combination of prosciutto, pine nuts, garlic, sage, lemon zest, egg and breadcrumbs. Then the turkey is rolled and tied prior to being frozen.
