Shredded Chicken Enchiladas

Introducing our mouth-watering Shredded Chicken, Black Bean, and Capsicum Enchiladas – a fiesta of flavours packed into every bite! These enchiladas are a delicious blend of tender shredded chicken, hearty black beans, and vibrant capsicum, all wrapped in a warm and soft wheat tortilla.

Frozen product. If cooking when defrosted, remove plastic cover and foil. Bake in a preheated 180 degree oven for 25-30 minutes or until golden on top and centre is hot when tested.If cooking from frozen, remove plastic and cover top with foil. Cook in a preheated 180 degree oven for 25 minutes. Remove foil and cook for a further 25 minutes or until the top is golden and the centre is hot when tested.
Chicken breast is marinated and then slow-cooked in chicken stock before being shredded. The chicken is mixed through with diced red capsicum and black beans. Wheat tortillas are pan-fried and then willed and wrapped with the chicken mixture. Finally the enchiladas are topped with The Dinner Co’s enchilada sauce and mozzarella cheese.
